Oatmeal Raisin Cookies

super soft and rich in fibre, loaded with oatmeal and raisin.

  1. 2 cups of all-purpose flour
  2. 1 tsp of baking soda
  3. 1 tsp of baking powder
  4. 1 tsp of salt
  5. 1 cup of unsalted butter, softened
  6. 1 cup of sugar
  7. 1 cup of packed brown sugar
  8. 2 large eggs
  9. 2 tsp of vanilla extract
  10. 2½ cups of oats (not instant)
  11. 1 cup raisins


  1. Baking sheet
  2. Baking pan


  1. Sift flour, baking soda, baking powder, and salt together
  2. Add butter, two sugars, eggs, vanilla extract to Ventray Stand Mixer, use flat beater beat for 1 minute at speed 2
  3. Increase to speed 4, mix and cream well until fluffy and colour lightens
  4. Add in flour, beat at speed 3 for about 1 minute, until no visible sign of flour
  5. Fold in oats and raisin with a spatula, mix until ingredients fully incorporated

Oven Directions

  1. Pre-heat oven to 350°F
  2. Drop scoops of cookie dough 2 inches apart onto sprayed baking sheets
  3. Bake for 11-13 minutes, or until golden
