Gazpacho

Ingredients

  1. 2lbs ripe tomatoes, peeled, chopped
  2. 1 onion, chopped
  3. 1 cucumber peeled
  4. 1/2 green bell pepper
  5. 1/2 red bell pepper
  6. 1 scallions, peeled, chopped
  7. 2 cloves of garlic minced
  8. 1/3 cup extra virgin olive oil
  9. 3 tbsp balsamic vinegar
  10. 2 tsp hot pepper sauce
  11. 1 tsp ground cumin
  12. 1 cup chilled tomato juice
  13. salt and pepper to taste
  14. croutons, fresh herbs to garnish

Directions

  1. In soup pot, stir together tomatoes, onion, cucumber, bell peppers, scallions, garlic.
  2. Pour into blender, work in two batches, blend over medium speed until finely chopped.
  3. Pour ready soup in large bowl, work on the second batch in blender
  4. Combine soup in soup pot, add in oil, vinegar, hot sauce, and seasoning, add in cold tomato juice.
  5. Serve and garnish with your choice of toppings
