Blueberry Scones

Ingredients

  1. 360g cold milk
  2. 105g brown sugar
  3. 20g lemon zest
  4. 3 eggs
  5. 735g whole wheat flour
  6. 3g baking powder
  7. 5g salt
  8. 60g butter
  9. 250g blue berries
  10. 2 tbsp white sugar

Directions

  1. Sift together flour, baking powder, and salt
  2. Cut cold butter into small chunks, add into Ventray Stand Mixer, mix with the sifted flour over low speed until small chunks of dough form
  3. Add in blueberries, mix well, then add in milk, egg, and mix over low speed until well combined
  4. Remove dough, shape and divide into 25-30 triangular pieces
  5. Place half an inch apart, brush with egg wash sprinkle brown sugar

Oven Directions

  1. Preheat oven to 370°F
  2. Bake for 18-20 mins or until golden
