Chicken Liver Pâté

Blend together this awesome dip that will be the best thing to serve at your next family party

  1. 1 lb chicken liver
  2. ¼ cup unsalted butter
  3. ½ cup heavy cream
  4. ½ cup Madeira, marsala, or sherry
  5. 10 bay leaves
  6. 6 sprigs of fresh thyme
  7. ½ onion
  8. 1 tbsp minced shallots
  9. ¾ teaspoon salt
  10. ½ tsp black pepper
  11. ¼ tsp paprika



  1. Melt butter in skillet over medium heat, add in onion, salt, pepper, thyme, bay leaves and shallots
  2. Add cleaned chicken liver sauté until tender, reduce head then add in cooking wine (sherry or Madeira)
  3. Reduce and simmer until dry.
  4. Remove bay leaves and sprigs of thyme
  5. In Ventray blender, add in all of the ingredients use medium speed and blend well for 30-50 seconds.
