Pumpkin Spice Muffins

Rich, full of flavour with all the right spices made with our Ventray Stand mixer.

Ingredients

  1. 2 cups flour/whole wheat flour
  2. 2 tsp baking powder
  3. 1 tsp baking soda
  4. 2 tsp ground cinnamon
  5. 1 tsp nutmet
  6. 2 tsp ground ginger
  7. 2 eggs beaten
  8. 1 cup pumpkin puree
  9. 1/4 cup white sugar
  10. 1/4 cup brown sugar
  11. 1 cup apple sauce
  12. 2 tbsp vegetable oil
  13. 1 tsp almond extract
  14. handful chopped walnuts

Equipments

  1. muffin tins
  2. muffin paper cups

Directions

  1. In Ventray mixing bowl, combine eggs, pumpkin puree, sugar, applesauce, oil, and almond extract blend using flat beater for about 1-2 minutes on medium low speed.
  2. Slowly add in flour mixture into Ventray mixing bowl blend until ingredients combined, do not over blend.

Oven Directions

  1. Preheat oven to 350°F, mix together all dry ingredients
  2. Bake for 25-30 minutes, test with a toothpick
  3. Remove from oven, let cool for 5 minutes, transfer to wire rack to cool completely.
