Walnut Banana Cake

Warm sweet and chewy, you can also add in chocolate chips and dried berries to take this recipe up a notch,

  1. 185g butter, room temperature
  2. 1 cup sugar
  3. 3 large eggs
  4. 2¼ cups self-raising flour
  5. ¼ tsp salt
  6. ¾ baking soda
  7. 1½ tsp ground cinnamon
  8. 2 cups mashed ripe banana
  9. 2 tsp vanilla extract
  10. ¾ cup sour cream
  11. 1 cup walnut halves
  12. ¼ cup boiling water
  13. 3 tsp instant espresso coffee


  1. 9 inch round cake pan or loaf pan
  2. Parchment paper


  1. In Ventray Stand Mixer, beat in butter sugar over medium speed until fluffy and pale
  2. Add in eggs one at a time, beat until just combined
  3. Mix boiling water with instant coffee mix
  4. Add in all dry ingredients into Ventray Stand Mixer, add in banana, instant coffee, sour cream, vanilla extract, blend until fully mixed
  5. Pour batter into cake pan

Oven Directions

  1. Preheat oven at 350°F, grease and line a loaf pan or a 9 inch round cake pan
  2. Bake cake for 40-55 minutes, or until a toothpick comes out clean.
  3. Remove from oven cool for 5 minutes before transferring to wire rack to cool completely
